Pumpkin Waffles with salted caramel whipped cream
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
A pinch of salt
1/2 cup roasted pumpkin puree (I had leftovers)
3/4 cup oat milk
1/4 cup orange juice
1/4 cup melted butter
Combine flour, baking powder, baking soda, cinnamon and salt in a bowl and mix.
Combine pumpkin puree, oat milk, orange juice and melted butter in another bowl and mix until blended. A]\Add eggs, one at a time and mix until blended.
Add the flour mixture and mix gently only until blended.
Cook on waffle iron until crisp and golden.
Salted caramel whipped cream
2 cup whipping cream
1 tablespoon white or brown sugar
1 tablespoon salted caramel (can use from a jar)
Whip the cream with the sugar and caramel until soft peaks form.
Serve with the waffles with whipped salted caramel, maple syrup and a light sprinkle of maldon salt.
