Chocolate Ice Cream Sandwiches

I recently bought a Breville ice cream maker and have been having fun experimenting with a few flavours and ingredient. The first one i made was salted caramel ice  cream, one of my favourite flavours, the second was this chocolate ice cream to be sandwiched between two soft chocolate cookies. If you don’t want to make the ice cream just use any store bought ice cream and use it instead. the cookies making the sandwich are quite useful so I am sharing.


Cookies:


2/3 cup brown sugar

1/4 cup butter, softened

1 teaspoon vanilla extract

1 1/2 cups flour

1/3 cup cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon salt

4 tablespoons milk or half and half

Combine sugar, butter and vanilla in a bowl of an electric mixer and beat until fluffy.

Combine flour, cocoa powder, baking powder and salt.

On low speed add flour mixture to sugar and butter alternating with the milk.

When a dough forms remove from mixer and roll on a lightly floured surface into a circle not more than 1/4 ” thick.

Cut the dough into circles using a 3″ cookie cutter, place circles on a lined baking sheet and re-roll the dough gently until you have about 12 cookies.

Bake in preheated 350F oven about 9-10 minutes until done.

Remove to a wire rack to cool.


Ice Cream:


2 cups cream

1/2 cup milk

6 oz dark chocolate, chopped

5 egg yolk

1/2 cup sugar

Place cream, milk and chocolate in a medium pot and heat over low heat until the chocolate melts, stirring. Do not let this boil.

Place egg yolks and sugar and a bowl and mix with a whisk or a mixer until light and fluffy.

Remove chocolate mixture from heat and gently pour half of it into the egg mixture, stirring constantly.

Now pour the egg mixture back into the chocolate and place back on low heat.

Cook gently until the custard reaches 160F or it coats the back of the spoon (draw a line horizontally, if the space remains, it’s likely done).

Pour the mixture into a bowl, cover with plastic on the surface, cover the bowl and refrigerate until completely cold. I do this the previous day or early in the day.

To make the ice cream follow your ice cream maker instructions.

When ready, remove the ice cream and pack into round 3″ sillicon molds. Freeze until solid. If you don’t have the mould spread the ice cream in a dish about an inch thick and freeze. Cut into 3″ circles when ready to assemble.

To assemble, remove ice cream from molds and sandwich between two cookies. Keep frozen until ready to serve.

If you wish, roll the edges of the ice cream sandwiches in chopped sugared nut.
