Rice and lentils with roasted vegetables

Mujadara is a classic middle eastern dish that I love and occasionally make. It consists of cooking rice and lentil together and topping with cruspy chopped onion. Simply delish. This is a version of the concept, made with leftover rice and lentils that I had and mixed with roasted ribbons of carrots and parsnips. Rice and Lentils with Veggies

Mediterranean cuisine has a dish called Mujadarah where lentils and rice are cooked together and then topped with slow cooked caramelized onion. It’s delicious and I make it often. This is a spin on that recipe but I cook everything separately and then combine “stuff” ┬átogether. This way I can experiment and create different dishes from the basic rice and lentils.
