Rice with sprouted lentils, roasted cauliflower and pistachios

March 16, 2015

Rice is one of the pantry staples that helps you put together a good dinner without having to run to the store. I find that people divide between those who love potatoes and those who love rice. I have my foot in both camps and have developed a decent repertoire of main course rice (or other grains) dishes for vegetarian style dinners. I started pre-soaking the rice recently after reading about it in various sources.... View Article

Fennel, pear, endive, blood orange and roasted squash salad

March 9, 2015

Sometimes the best salads happen when you least expect it. I was making a fennel and blood orange salad with the usual accoutrements and decided to add the lone acorn squash that was sitting on my counter. I roasted thin wedges of it with a drizzle of olive oil and a sprinkling of brown sugar and I have to say it made this salad (you can eat it with the skin, no need to peel).... View Article

Black bean quesadillas with cherry tomatoes and cilantro salad

March 6, 2015

It’s always interesting to see what other food bloggers write about. I have looked around on the internet and it seems the trend at the moment is to reflect about the change of season. It’s very tempting to talk about the change in weather and how one is emerging from winter hibernation. Some are still writing about making soups and curling up on the sofa with a cashmere blanket and a good (cook)book, others are... View Article

One skillet pasta? They do it in Puglia

March 4, 2015

My Italian neighbour (thanks Marisa) alerted me to the trend of cooking pasta in a skillet: pasta, veggies, flavouring, oil, water, the whole thing in one skillet and you have a beautiful and flavourful pasta dish in its own sauce  in about 10 minutes. A quick internet search produced Martha Stewart as the instigator. One of Martha’s editors traveled to Puglia in Italy a couple of years ago and saw them making pasta in one... View Article

Warm kale and mushrooms salad

February 26, 2015

Kale salads took the culinary world by a storm and all of a sudden every trendy chef was offering kale salads on their menu. Suddenly, or so it seemed, there were curly kale and black kale and red kale and Russian kale available to us and we jumped on the food trend bandwagon. Kale has a strong flavour a sturdy texture and needs some help making it into a salad. We chopped, ribboned, even massaged... View Article

Roasted cauliflower with chickpeas, pine nuts and tahini sauce

February 18, 2015

A while ago I attended a special dinner at Mission Hill Winery in Kelowna. The dinner was held in their Chagall room where a long table was set with linen, flowers and crystal and dinner was served family style. The Chef served a dish of roasted cauliflower and chickpeas that was just my kind of food. I adapted it to my vegetarian cooking style omitting the prosciutto that he draped over the dish. I didn’t... View Article

Merida: Oliva Kitchen and Bar and Chopped Salad with Lime Vinaigrette

January 28, 2015

I have taken a liking to salads that are composed of many vegetables, all finely chopped and tossed together in a harmonious pile. They are easier to eat than a large leafy salad and the flavours blend together so nicely with the dressing, just my kind of thing. I have had one such salad recently on a side trip to Merida last week. We went there to take a cooking class at Los Dos cookings... View Article

Yucatan: Villa Verde Merida (and egg and avocado breakfast recipe)

January 26, 2015

Last week we headed west of the Mayan Riviera to Merida to explore the Gulf of Mexico side of the Yucatan Peninsula. The Yucatan Peninsula separates the Caribbean sea from the Gulf of Mexico and includes three states: Quintana Roo, Yucatan and Campeche. The Yucatan is home to the Mayan people and is distinct from the rest of Mexico by its culture and cuisine. The new double lane highway from Cancun to Merida now has... View Article

Yucatan pickled red onions (Cebollas Encurtidas)

January 26, 2015

One item that appears on almost every plate here in the Yucatan peninsula are the brightly coloured pickled red onions. If you look at any cook’s kitchen here you are sure to find a jar or a dish of this lovely condiment hanging around to be used with just about every food other than dessert. There are various ways of making these pickled onions but what is unique here is that they make them with... View Article

Puerto Aventuras – Rajas Poblanas from Chef Danny at Latitude 20

January 22, 2015

The weekly cooking classes at Latitude 20 restaurant are packed every week. It’s a wonderful opportunity to learn authentic Mexican and other South American cooking from the knowledgeable Chef Danny and meet other people in the community who clearly have an interest in learning about local cuisine. Although no reservations are required to attend the class (you can just show up) Danny is never phased by the number of people (anywhere from 20 to almost 40)... View Article

Cancun – Mercado 23 and poblanos and red pepper tacos recipe

January 14, 2015

Don’t be mad at me. I am writing this post sitting on a lounge chair on the beach at Chac Al Hal Bay with my toes in the cool white sand and gaze occasionallyat the unparalleled view of turquoise waters, a few palapas and a fishing boat or two in the distance. The Christmas crowd has come and gone and the resort village is back to the few die hard regulars that fell love with... View Article
