Chocolate Waffles with Caramelized Pears

November 27, 2017

Pancakes and waffles breakfasts are rare in our house these days. There were times when it was a standard weekend fare but then the kids were at home and life was different. Still, now and then I feel like making waffles and indulge: whipped cream, maple syrup, caramelized or fresh fruits, the works. This past weekend was one of those occasions and believe it or not, I made both buttermilk waffles AND chocolate waffles. There... View Article

Pavlova under a meringue cloche

November 18, 2017

The idea for this meringue came from my all-time favourite cooking show: Masterchef Australia. I have watched two seasons (more than 60 episodes per season) and to my great frustration instead of continuing with the following season they are replaying the last one. How annoying can they be? I feel like writing to complain (can’t watch it online). I love the Australian show for many reasons and learned a lot watching these amazing young contestants... View Article

Torta di Mele (Italian apple cake)

November 10, 2017

I would probably choose an apple dessert over chocolate. Did I lose you already? Hang in there. I love the contrast of sweet and tangy and the freshness that apples add to a dessert. When I have a chocolate dessert, I prefer it with a raspberry sauce, a cherry or some other fruity relief to provide contrast and context. Not that I can’t gorge on pure dark chocolate alone, I can do that well, but... View Article

Apple Tart Tatin

November 9, 2017

I have been baking up a storm lately, some of the creations have made to the blog and the rest hopefully will if I get to photograph them. Today I focused on beautiful apples from a local orchard that originally were  intended for an Italian apple cake but ended up in a classic French tart tatin. I made this same desserts last week but it was gone before I had a chance to photograph it... View Article

Flatbread with pears and blue cheese

September 19, 2017

So I never make (or buy) one of anything and when I made the previous pizza I also made this one. I bought beautiful firm pears at the market the other day (yes, it’s fall produce) and thought they would be beautiful on pizza. Usually pear and gorgonzola is the flavour combination I like but I didn’t have gorgonzola and blue cheese worked just fine. I sliced the pears paper thin on a mandolin and... View Article

Lime tarts

September 7, 2017

I was looking around the cookbook section at chapters a few weeks ago and found this lovely little book inside a beautiful box that looked like a chocolate or high end pastry box. Sure enough it was Laduree’s book Sucre featuring Laduree recipes for its world renowned pastries and sweets. It was the only copy and of course I grabbed it. It started me on a dessert making mania that hasn’t stopped yet. No one... View Article

Avocado salad with dukkah vinaigrette and goat cheese

August 11, 2017

A beautiful ripe avocado is a special treat and once in a while I indulge. You have to buy it just right, either to serve immediately or to ripen on your counter for a day or two before serving. I have thrown away many avocados that I bought with good intentions and never got around to using. Once they go soft there is nothing to do but discard them. The softness of the avocado is... Berries, ice cream and meringue shards

August 9, 2017

Here is an easy summer dessert that uses the beautiful seasonal berries. I macerated the berries with a little sugar and ice wine (or dessert wine) top them with ice cream and whipped cream, then cover it all with meringue shards that add an element of surprise (you cannot see what’s under) and a crunch factor to this refreshing, simple dessert. I had an opportunity to cook for visiting friends in the last couple of... View Article

Saffron poached pears

April 14, 2017

The small Honey Belle pears are ideal for poaching and serving as a stylish little dessert that is easy to execute. I thought I’d use saffron threads in the poaching liquid to give them a pretty golden colour and a delicate saffron flavour and also add a warm tone to the sauce. You can poach the pears whole or cut in half. They cook quickly so be careful not to over cook them. Last time... View Article

Granola, Yogurt, Honey, Papaya

December 19, 2016

Local fruit and granola dishes are featured on any breakfast menu on the Mayan Riviera and although I rarely order it at restaurants I enjoy making it at home now and then. Just like we have unparalleled berries, apples, pears and stone fruits in the Okanagan, local fruits here are so ripe and full of flavour that they hardly resemble the version of these same fruits that we get at home. I am yet to... View Article

Fennel, apple and orange salad

December 8, 2016

Fennel and citrus are one of those marriages made in heaven. A squeeze of lemon or a few orange or grapefruit segments make the fennel come alive. This salad is made simply by combining the ingredients, squeezing the juice of the orange over and adding a drizzle of olive oil. A little sea salt goes a long way in this salad and there are two items that I must have: good honey and a handful... View Article
