Cauliflower and Potato Gratin with Crème Frâiche

October 1, 2012

Here is a quick, easy and delicious dish to make with cauliflower and potatoes. Vegetables are so beautiful. They lend themselves to many preparations and because of their seasonality, you never get bored with them. By the time you have cooked one in a number of different ways their season is up and a new vegetable prevails at the market. Having said that, of course I know that in the supermarkets you get more or... View Article

Burritos with Potatoes, Roasted Poblanos and Beans (vegan)

September 28, 2012

Burritos are such a nice food to prepare. You can make so many different fillings and simply wrap them in small or large flour tortillas and voila, lunch or dinner is ready. You don’t even need a salad because the greens can form part of the filling. These burritos are quite satisfying, with sautéed potatoes forming the main part of the filling. I make this dish dairy free and you can even make it fat... View Article

Roasted Smashed Baby Potatoes with Brie and Ancho Chili Jam

September 20, 2012

I am not entertaining too much lately but still, have been in the mood for making all kinds of little appetizers. Why do we have to make these just for guests? When my kids say not to fuss, it’s “just” them, I always tell them that they are the most important audience I have. Whatever you do, it has to start at home first. So I have made a few things to be posted in... View Article

Parmesan Fries

September 13, 2012

Call them French fries, pommes frites, freedom fries, chips, patatas fritas or oven fries, who doesn’t like them one way or another. Granted, whether long or short,  some like them matchstick-thin and crispy, other like them thick cut, crispy on the outside and soft inside. I like them any way they come and tend to make them at home every now and then. Today I was in the mood so I made some oven fries... View Article

Potato Cakes with Smoked salmon

September 11, 2012

I made these potato cakes as part of a breakfast selection when I had non-vegetarian friends visiting, hence the smoked salmon. If I remember correctly I poached a few eggs and offered them along with this dish. The potato cakes can be made in advance and reheated at breakfast. I made them as little cakes but they can also be made thinner and larger, pancake-like (see image below). When grating potatoes I prefer to use... View Article

Roasted New Potatoes

September 8, 2012

Whenever I make these potatoes (which is quite often), my guests love them and ask how I make them. It is an embarrassingly simple recipe but in the spirit of full disclosure, here is how I do it. The potatoes in the image are a German variety called Sieglinda butter Potatoes that I get from Little Church Organics in Kelowna (see post about Kelowna for Foodies). They are so delicious and flavourful that I wish they... View Article

New Potatoes and Green and Yellow Beans Salad with Creme Fraiche

August 29, 2012

This summer I have been making many different potato salads and they have been quite popular here at home. Different than the traditional salads these are a melange of new potatoes and a variety of vegetables I happen to have in my fridge at the time. I toss them together with a dressing, add a couple of hard boiled eggs (or not) and voila, a lovely summer potato salad. I made this salad today with leftover... View Article

New Potatoes with Peas, Corn, Fresh Dill and Cream

August 8, 2012

New potatoes are one of the treats of summer and we have them often. I serve them cold in salads, steam and serve plain with a sprinkling of fleur de sel, combine them with other vegetables and sometimes, as a special treat, steam and drizzle them with thick cream. Oye. So good. In this recipe I also add freshly shelled peas, raw or barely cooked, as well as cooked corn scraped off the cob, just... View Article

Smashed Baby Potatoes with Parmesan

August 5, 2012

Baby potatoes are so cute. Round and plump and delicious they lend themselves to many food preparations. You can toss them with olive oil, salt and pepper and a dash of paprika and roast until crisp outside and soft inside. You can steam them and toss with butter and chopped herbs. You can toss them with butter and brown sugar and roast. I often steam them first a few hours in advance and then toss... View Article

Roasted Root Vegetables Stacks

August 1, 2012

Here is a pretty dish to make where you want a little more elegant presentation of a rustic dish. Any combinations of root vegetables works. I bake them in a ceramic baking pan and then cut into squares. To get the height I stack two squares one on top of the other, it looks more interesting that way. Alternatively, bake them in a deep pan and stack them up to the top. This is the... View Article

Summer Potato Salad with Quails Eggs

July 27, 2012

Quail eggs are not something I cook with often but I saw them at a store and bought them this time. They were sitting in the fridge for a couple of days before I got to them. The shells are so gorgeous, like work of art. I was considering poaching but ended up hard boiling them and adding to the potato salad I was making that day (we have had a few potato salads these... New Potatoes and Vegetables Salad

July 20, 2012

We have been eating pretty simply these last few days, you have seen the postings. A salad here, a chilled soup there, corn on the cob almost every day. Everything so fresh, so flavourful and so seasonal. That’s how I enjoy cooking the most. Today for lunch I put together this lovely potatoes and vegetables salad tossed with a store bought mayonnaise and flavoured with a bunch of fresh dill, chopped and mixed into the... View Article
