Dutch baby pancakes with blueberries, creme fraiche and bluberry compote

May 19, 2020

I enjoy making Dutch baby pancakes now and then. I don’t know why they are called Dutch though. When we were in holland they were no where to be found and whoever I asked, did not know about them. What they have in Holland are the little proffertjes, small round delicious pancakes that you can have all day long. These are reminiscent of popovers as they puff up in the oven and create a bowl... Vegan pancakes

March 30, 2020

It’s the kind of morning that requires pancakes. Cloudy, blowing outside, cushions flying off all over the rooftop patio. I was almost blown off myself trying to retrieve them in the wind and rain. But, it was fun. I make the pancake plant based without using eggs and oil BUT I can’t give up the whipped cream, so there. You, of course, suit yourself:). They are light and fluffy because of the baking powder so... View Article

Waffles with oats and strawberry sauce

March 25, 2020

I was dying to go out for breakfast this morning but of course, we must stay home. So I made waffles, something I don’t indulge in too often but enjoy it when I do. #quaratinecooking#dontroamstayhome#physicaldistancenotsocialdistance#physicaldistancesocialconnection . So I spent some time with our daughter and baby on video, sang to him (he wasn’t impressed) and got a few smiles and cooing. I think he may like the sound of my voice. Thank you @alexis_honce for staying connected. made... View Article

Roasted Butternut Squash Mini Pancakes, vegan

November 3, 2019

With all the beautiful squashes that are available at the markets of course I am buying and cooking them frequently. Roasting squashed of all kinds is probably my favourite way of serving them and then I can also use the roasted flesh to make into soups, use in baking and like this morning, use them in pancakes. I made these with leftover roasted butternut squash from yesterday and they were lovely, although I... View Article

Amsterdam Trip report (part 4 of 5): Proffertjes – little Dutch pancakes

November 21, 2016

I have one more report about Amsterdam but it’s not ready and I had to share with you the recipe for these little yeast pancakes they eat all over Amsterdam. My obsession during our stay other than art were these little pancakes they call proffertjes. Once I tried them a couldn’t go a day without. Proffertjes are served anytime although it is essentially a breakfast item. They are made with a yeast dough and cooked... View Article

Dutch Baby pancakes

June 6, 2016

Baked in a cast iron skillet, these are a cross between pancake and a popover. The simple batter contains eggs, butter, flour, milk and sugar with a little vanilla flavouring. It’s best to whip it up in a blender so it’s lump free. Once it’s ready, you pour it into a heated cast iron skillet and slide it into the oven. Within minutes the batter will puff up creating it own raised sides “bowl” ready... View Article

Mini buttermilk pancakes with berries

July 6, 2015

My daughter Jade was home this weekend and it was fun spending time around the table visiting and enjoying her company. Summer breakfast on the patio is special, especially when you can linger without a major agenda calling you away. Pancakes were always a weekend breakfast treat when the kids where growing up and I try to keep the momentum going when they visit now. I made these simple buttermilk pancakes with no frills and... Red quinoa and Chia Seeds Mini Pancakes

May 30, 2015

Two pancake recipes in one week seems like a lot but that’s how sometime things go. I cooked red quinoa the other day and wanted to try it in a couple of different dishes. Pairing it with vegetgables is the predictable choice (and I did make red quinoa with shaved carrots and asparagus) but I thought I’d try it with pancakes and loved the results. The pancakes had nutty flavour with good texture and the... View Article

Mini banana pancakes with banana and blueberries

May 24, 2015

Summer is time for leisurely breakfasts on the patio and although most of the time it is oatmeal or whole grains, sometimes I indulge in a little treat. Pancakes and waffles with fresh fruit, maple syrup and whipped cream are high on my “indulge” list.  And I like them small: compact and puffy little disks that can play the main role or be a side-kick, whatever else you are serving. For this recipe I chopped... View Article

Fermented pancakes – vegan, no oil, no eggs, no dairy, no sugar

March 2, 2015

A healthier alternative to regular pancakes that are loaded with eggs, butter, sugar and dairy, this easy recipe calls for mixing flour and water and letting it sit covered for several hours or overnight before cooking. The flour ferments and lightens with the air bubbles and the pancakes are surprisingly light and delicious. This morning I used half white flour and half garbanzo flour because that was what I had in the pantry but I... View Article

Quinoa buttermilk pancakes

September 22, 2014

If you have been following this blog you would know that I am a big fan of the breakfast ritual. I consider a leisurely breakfast a luxury and indulge in it whenever possible. Not every day. Most mornings breakfast is a steaming bowl of oatmeal with seasonal fruits enjoyed on the patio when the weather is good or indoors when it’s too cold outside, but even then, simple as it is, I try to enjoy...
