Roasted eggplant and red pepper salad

June 8, 2021

Before Covid I started inviting friends over for a glass of wine and some bites instead of a multi course dinner. It’s easy to prepare, I can sit and enjoy the company and there isn’t much clean up to do afterwards. This does not mean they have to go home hungry. You can prepare a few salads to serve with breads, a couple of dips (hummus, tzatziki etc.) a few fruits, a nice selection of... View Article

Mezze Party

May 28, 2021

I haven’t blogged in ages but thought I should put all my instagram recipes to the blog for ease of searching. I use the blog, at least in the past, as my own little cookbook reminding me of recipes I made and I my kids use it now and then to make things they remember from home. I believe that I have disconnected the mailing list at least temporarily now that I am doing an... View Article

Grilled eggplant with sesame oil, herbs and flat bread

November 2, 2018

Grilling the eggplant over flames gives it a charred smoky flavour that you don’t get by roasting it in the oven. Same thing for the grilled bread. The blackened, caramelized strips on the flatbread are a good accompaniment to this eggplant dish. Having said that, if you do not have access to a grill you can still make this dish successfully roasting the eggplant in the oven and cooking the bread in a... View Article

Grilled Eggplant with Miso Glaze

May 4, 2018

I have had a few good versions of Japanese eggplants in the past and have been looking for a way to recreate something similar at home. I found a recipe for miso eggplant in an Australian publication and worked with their recipe to make this dish. I think I would try it with Japanese eggplants next time although this version was nice. The recipe called for grilling it but I roasted it in the oven... View Article

Roasted mediterranean vegetables with olive oil

September 5, 2016

Eggplant, peppers, onion and zucchini are a classic mix in Mediterranean cuisines and very much the kind of foods I grew up with. I was reminded of this dish in a Spanish class recently (taught at VOM FASS by Heather of Heather’s Kitchen) and in the process of cleaning out the fridge before we left on a trip, made this dish for dinner one day. Even if you don’t usually like eggplant, I think you... View Article

Eggplant spread with roasted pepper

March 17, 2016

This is one of my favourite ways of using eggplant – roasting and combining the flesh with tahini paste to make a traditional mediterranean style salad, or I call it a spread or a dip. Get a shiny, plump eggplant without bruises. Make a few cuts on top for steam to escape and place in the oven on a foil lined baking sheet. Roast for a while (30 minutes or so) at 400F until it... Grilled eggplant with pomegranates – Cooking with Orly in Tel Aviv

November 5, 2014

I recently spent a couple of weeks in Israel  and needless to say food was on my mind. Although I was there for a different reason, I managed to squeeze in as many food experiences as I could, and one of these experiences included a food tour and cooking class with Orly in Tel Aviv. I found Orly’s website Cook In Israel through an online search and checked the references on Trip Advisor. Her tour... View Article

Spain – Andalucia: Villa Tiberio, Eggplant fritters with honey (berrenjenas con miel)

March 30, 2014

One of the foods on my “culinary must do” list while  in Spain was eggplant fritters with honey. It is seemingly an unusual dish, I have never had it before and never really thought of serving a savoury eggplant with honey but it did sound good. I imagined it crispy on the outside, soft inside, a little savoury with a sweet honey drizzle, surely it would be delish. According to Claudia Roden (the Julia Child... View Article

Eggplant “Spaghetti” with Far East and Mid-East Sauces

September 12, 2012

I know that eggplant is not for everyone but I love it and maybe someone out there does as well so here it goes (why am I appologizing?). I have had these three Japanese (or are these chinese?) eggplants in my fridge for a few days now. They are the long skinny eggplants with purplish skin that are available every now and then in our markets. They have thin, edible skin and their flavour is... View Article

Pasta with Summer Eggplant and Tomatoes

August 29, 2012

I know that many here in North America are not fans of eggplant. In mediterranean cuisine it is a popular vegetable and appears in many dishes. This recipe makes a delicious pasta dish and I hope to entice you to try it. You can develop a palate for eggplant. I made this pasta with the pink striped eggplant pictured below but you can make it with the regular type as well. When buying eggplants make... View Article
