Quinoa and Company

May 22, 2012

Have you joined the quinoa “club” yet? It seems that every now and then a new trend takes over the culinary world and everyone starts cooking it. Quinoa is one such phenomenon. Quinoa looks like a grain but in fact it is a seed passed on to us through the ancient Inca culture. It’s known as the super seed and its claim to fame is the fact that it is gluten free and protein rich. In... View Article

Spring Asparagus and Peas Risotto

May 21, 2012

Second instalment in the risotto “series”. Here is a special spring treat – combining asparagus and risotto for a lovely lunch or dinner. Risotto lends itself to many flavours. You can add vegetables to the risotto as it cooks, or add cooked vegetables to it at the end, when it is almost done. In this recipe I add the asparagus about half way through the cooking to allow the grains and asparagus to finish cooking... View Article

How to Cook A Risotto

May 20, 2012

Let’s talk risotto. Risotto is a fabulous culinary creation. Creamy and satisfying yet with a little bite, it has beautiful balance and engages well with many flavours. It is very simple to make and a wonderful dish to add to your culinary repertoire. I make it often either simply, minimalist style, or embellish it with seasonal vegetables and even fruits (think pears). I dedicated a whole chapter to it in my recent (unpublished) pasta book. I... Beans, Barley, Pistachios and Radicchio Salad with Roasted Tomato Oil and Sherry Vinegar

April 12, 2012

This salad features both grains and legumes, ingredients that I often combine. The soft beans combine nicely with the chewy barley and can be served hot or at room temperature as a substantial salad. I flavour this with roasted tomato oil that I make and often keep in the fridge. The tomato oil is so flavourful that you don’t need much more other than combining it with sherry or wine vinegar for a flavourful dressing.... View Article

Israeli Couscous with Pine Nuts and Broccoli

April 11, 2012

Israeli couscous is really tiny pasta balls but it may be easier if you think of it as a grain. To cook this couscous you sauté it first in a bit of olive oil until golden and then add hot liquid (proportion is about 1 couscous to 1.5 water), cover and cook until tender. You can add vegetables to the couscous as it cooks although I tend to cook it by itself and add it... View Article

Couscous with Feta and Oregano

April 11, 2012

Couscous is a Mediterranean grain that requires no cooking, only soaking in boiling water. It is versatile as it can be incorporated into hot or cold preparations and served as salad, main course or a side dish. This recipe is for a quick and flavorful salad made by soaking the grains in the dressing ingredients to fluff them up and then tossing in a few additional ingredients to add layers of flavours and textures. Don’t... View Article

Barley with Fennel, Apples and Dates

April 2, 2012

Barley is such a versatile grain. It’s easy to cook, retains a nice texture and keeps in the fridge for a number of days. When I cook barley I usually cook more than I need so I have some on hand ready to be incorporated into soups, salads, vegetables dishes, breakfast and even desserts (think barley pudding). In this recipe I use barley that has already been cooked and add it to the sautéing fennel... View Article

Barley and Mushroom Pilaf

April 2, 2012

Pilafs are easy to make and keep whatever grains you are cooking nice, fluffy and separated. The grains get coated with oil before you add the liquids, and this helps them stay apart. I cook this barley pilaf just as I would a rice pilaf. Quite delicious in my opinion, and why not try a different grain? Ingredients: 2 tablespoon olive oil 1/2 small onion, chopped 1 small carrot, diced 1 inner celery leave, chopped... View Article
