Mexican red sauce
Here is a simple and delicious Mexican style tomato sauce that goes with many Mexican dishes. You can thin it out as you need.
1 lb tomatoes 🍅
5 guahijo Chiles, stem and most seeds removed
1/2 an onion, roughly chopped
2 cloves garlic, peeled
1 cup tomato puree
Place sauce ingredients in a pot, add water to just cover and bring to a boil. Lower heat and simmer for 20 minutes or so until everything is soft.
Let cool, then add to a blender together with a handful of cilantro and salt and blend until the sauce is smooth. You may not need all of the liquid, add as needed. Taste and adjust for salt.
Keep refrigerated. It will thicken as it sits so you can thin it out with water when using.
Use when red sauce (salsa Roja) is called for in Mexican dishes.
