Falafels
Baked Falafel Patties with homemade pita pockets.
Here is the method for the falafel. Traditional falafels are made with soaked but uncooked garbanzo beans. This is made with canned garbanzo. Easier.
1 can garbanzo, drained and rinsed
1 small onion, chopped
2 garlic cloves
1 tablespoon olive oil
2 cups green peas, blanched.
1 cup parsley, chopped
1/2 cup cilantro
1/3 cup mint, chopped
2 tablespoon chia seeds
1 tablespoon flax seeds
2 teaspoon ground cumin
1 teaspoon coriander
1 teaspoon baking powder
1/2 teaspoon baking soda
Salt CC an pepper
Combine all the ingredients in a food processor adding them in order and processing until well combined into a finely chopped mixture.
You may need to stop the processor a few times and use a spatula to move it down to the blade.
When ready, remove from the processor and check the seasoning adding salt and pepper as needed. Shape into patties with your hands or an ice cream scoop. They should hold their shape well.
Line a baking sheet with parchment and lightly spray with oil. Place the patties on the parchment and spray or brush with oil.
Bake at 400F until golden on top, then flip and bake on the other side until done.
Cool on a rack.
