Vegan fat free pancakes
Whole wheat and rolled oats fat free pancakes.
I found this beautiful local flour by Wolfgang Grain and Flour labeled certified organic and made from Red Fife wheat. Red Fife is classified as a ‘Heritage’ grain in Canada and the original grain has not been altered in over 50 years (no hybrids). It was the first variety of wheat registered in Canada.
This flour was fine and silky and I will try it in a whole wheat sourdough soon but this morning I made simple plant based pancakes. There was a sweetness to the pancake that I don’t usually notice with white flour.
1 cup whole wheat flour
1/2 cup rolled oats
2 tsp baking powder
1 tbs sweetener (sugar, maple, agave)
1 cup oat milk or another plant based milk (I make my own).
Combine in a bowl and mix gently and let sit a few minutes.
Cook in a non stick skillet until til golden, flipping once.
Serve with berries and topping. This time I used plant based yogurt instead of the compulsory whipped cream:).
