Bento Box

More Japanese influence in my kitchen. Bento box with onigiri rolled in furikake, miso deviled eggs, spinach balls, pickles.

To make the miso eggs hard boiled them, then mix the yolks with a little Japanese mayo and a little miso powder (I brought it back from Japan, not sure how or even if they use it). A little chopped chives , taste and add S&P.

The onigiri was what I make most often. Cook Japanese rice until done, cool slightly and form into shape. I use a triangular onigiri press that you can get online in various shapes. Once pressed roll in or sprinkle with Japanese rice seasoning, furikake, it adds savoury, salty, umami flavour.

The spinach balls are simply cooked spinach, water pressed out and spinach rolled into balls.

Sauce on the side can be anything you’d like. I like equal amounts of soy and ponzu with some mirin to sweeten.

Itadakimasu.
