Waffles with oats and strawberry sauce
I was dying to go out for breakfast this morning but of course, we must stay home. So I made waffles, something I don’t indulge in too often but enjoy it when I do.

So I spent some time with our daughter and baby on video, sang to him (he wasn’t impressed) and got a few smiles and cooing. I think he may like the sound of my voice. Thank you @alexis_honce for staying connected.
made the sauce with frozen strawberries, cooked with a little sugar and blended with an immersion mixer. I am out of fresh berries and avoiding going out for just that. Whipped cream is a must with waffles.
Waffles with oats and strawberry sauce

2 cups flour
1/2 cup rolled oats
2 teaspoons baking powder
1 or 2 tablespoon sugar
1 teaspoon baking soda
2 cup non-dairy milk
2 eggs
- Strawberry Sauce
2 cups frozen berries
2 tablespoons sugar
Directions
- Waffles
- Combine flour, oats, baking powder, baking soda and sugar in a bowl,
- Combine milk and eggs and whisk to break the eggs and mix them in.
- Pour the eggs into the flour and mix just until blended, do not over mix.
- Cook the waffles according to your waffle maker’s instructions. I used about 1/2 cup per waffle.
- Strawberry Sauce
- Place berries and sugar in a small pot and bring to a boil. Lower heat and cook until sugar dissolves.
- Puree in with an immersion blender.
- Whipped cream
- 1 cup whipping cream
- 1 tablespoon sugar
- 1 teaspoon vanilla
- Serving
- Serve the waffles with the berry sauce and whipped cream
