Homemade flour tortillas

Being at home and not wanting to run out to the store too often may be an opportunity to try out things that we didn’t try before. These flour tortillas are useful whether you like Mexican food or not. Use them for tacos, burritos or fill with hummus, salad or anything you like to eat.

These tortillas are very easy to make but best consumed the same day you make them. If you make a batch of dough and only need a couple of tortillas, keep the rest of the dough balls in the fridge for later use.

Ingredients

  • 2 cups flour

  • 1 teaspoon salt

  • 1/4 cups oil

  • 3/4 cup warm water

Directions

  • Place flour and salt in a bowl.
  • Add the oil and water and mix with a wooden spoon until water is absorbed.
  • Empty the bowl onto the counter, gather into a bowl and knead for 4 minutes or so or until the dough is smooth.
  • Let rest for 20 minutes.
  • Divide dough into 10 balls of equal size. You can weigh the dough to see how much each should weigh. Mine were 1.6 oz each.
  • Roll into balls, set on a plate and cover with plastic. Let rest for 30 minutes. I left the balls in a covered container overnight, separated with plastic.
  • When ready to proceed roll out the balls into 6″ circle approximately, stack them with parchment or plastic in between.
  • Heat a skillet to very hot.
  • To cook lay each tortilla into the skillet, cook on one side until cooked and golden in spots on the bottom. It doesn’t take long so keep checking.
  • Turn over and cook the other side, pressing the tortilla down as it puffs, until cooked.
  • Remove and keep covered with a towel until they are all done.
  • Best to use the same day so only cook as many as you need.
