Roasted pears with ice wine

Did I post this before? I think I forgot to post it but it’s too good to ignore. Roasted pears have a sweet, concentrated flavour and the cooking syrup adds a tangy element that is delicious with the pears. You can serve this on its own, with ice cream, gelato, creme fraiche etc. A sprinkling of something crispy is also nice: candied nuts, chopped honeycomb etc.

Ingredients
4 bosc pears
1/4 cup butter, melted
1/3 cup sugar or maple syrup
Juice of 1/2 a lemon
1 cinnamon stick
1 1/2 cups red wine
1/2 cup dessert wine for finishing the sauce
Directions
- Peet and quarter the pears and drizzle with the lemon juice.
- Combine melted butter, sugar, cinnamon, red wine and pears in an oven proof dish and mix.
- Place in a preheated 375F oven and cook until pears are cooked through (not mushy), basting them several times with the liquids. Cooking time depends on how ripe the pears are.
- When the pears are cooked through remove to a plate.
- Pour the cooking liquid though a sieve in to a small pot and add the dessert wine.
- Bring to a boil and cook until somewhat reduced and syrupy.
- To serve, place four pears quarters in each serving bowl, drizzle with syrup and sprinkle with candied nuts.
- Serve with ice cream, gelato, whipped cream etc.
