Plant based fat free scones
As promised I am posting a recipe for plant based scones that are also fat free. I don’t often make health claims on any of my recipes but I think this one would pass as healthy by most people.
I used quinoa flour in the first recipe and it has quite a distinct quinoa”ish” flavour. If you want something less pronounced either use another flour (like oat or spelt) or blend half quinoa and half another flour (I used spelt).
Ingredients
1/2 cup cashew milk
3/4 cup apple sauce, unsweetened
3 cups quinoa flour or combination of flours, see note above
2 tablespoons baking powder
1/3 cup sugar
1/2 teaspoon coarse salt
Optional: 1/2 apple, cut in small dice and a 1/2 teaspoon cinnamon
Directions
Combine cashew milk and apple sauce in a bowl.
Combine flour, baking powder and sugar in another bowl.
Add the flour to the milk mixture and mix only until blended.
Add the diced apple and gently mix it in.
Scoop the mixture with an ice cream scoop onto parchment lined baking sheet and bake at 350F until done, about 25 minutes.
