Fat free dairy free apple muffins

I made these little guys while visiting my daughter Alexis in Toronto. My daughter Jade and I flew to visit Alexis who is expecting a baby in January. We had a fun gals week, eating, shopping, cooking and relaxing. Too bad they all live so far from us.

These are simple muffins that do not contain dairy or fat. The little bit of sugar is optional, I forgot to add it when I made this recipe and they were perfectly fine without it.

As you can see I had these gorgeous pink rose apples, pink through the inside. However, you can use any apples for this recipe, or even pears.

 


Ingredients:


 

1 1/2 cups rolled oats (quick cooking but not instant)
1 1/2 cups oat milk
1/4 cup unsweetened apple sauce
2 teaspoons vanilla extract

1 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 cup sugar

1 apple, with peel, finely diced

Topping:

1 teaspoon cinnamon
2 tablespoons sugar


 

Directions:


 

Combine oats and rice milk in a bowl and let sit 5 minutes or while you get the rest ready.

Add apple sauce and vanilla and mix.

Combine flour, baking powder, baking soda, cinnamon and optional sugar in another bowl

Add flour to oats and mix.

Add the diced apple and mix it in gently.

Use an ice cream scoop to fill mini (or regular) muffin tins until almost full.

If you do the topping: Combine sugar and cinnamon, then sprinkle a little on top of the muffins.

Bake at 375F until golden on top and cooked through, about 20-25 minutes, depending on the size of the muffin tins.
