Roasted cauliflower with crispy crumbs and pine nuts
Roasting cauliflower is my favourite way of cooking it. Roasting brings out deep earthy flavours and natural sweetness that may otherwise not come forward. It’s not the only way to cook cauli, I like it pickled, steamed with a sauce, cauliflower rice, mashed and more. So many recipes, so little time.
I made this bowl of cauli for lunch (we eat simply over here) and it was so good and easy, I wanted to share.

Ingredients:
1 head cauliflower
2 tablespoons olive oil
Salt and pepper
1 cup bread crumbs
2 tablespoon olive oil
Salt and pepper
1/3 cup pine nuts
1 teaspoon olive oil
1/3 cup chopped parsley
Directions:
Separate the cauliflower into medium size florets, place on a foil lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper
Roast in a preheated 400ºF oven for about 20-30 minutes until done and slightly golden.
Heat olive oil in a skillet, add bread crumbs, salt and pepper and cook on medium heat, stirring, until crisp and golden. Remove from heat.
Put pine nuts in the skillet with the olive oil and cook until they begin to turn golden. Be careful not to burn them.
Assembling:
Place cauliflower in a bowl, top with crumbs, pine nuts and parsley.
Serve immediately.
