Watermelon bites with feta mousse
Here is something fun to make with sweet summer watermelons. Did you know that watermelon and feta is a delicious combination? something about the sweet and salty that makes your palate sing.
Cut the watermelon into 1.5 inch slices, as even as you can, then punch out rounds or squares with a small cookie cutter. These should be a one bite thing so don’t use too large cookie cutters. With a melon ball cutter scoop out the center of the watermelon rounds and then fill it with the cheese. Garnish with mint and there you have it, a fun and refreshing small bite.
Feta mousse:
1 cup feta cheese
1/2 cup whipping cream
1/2 cup whipping cream, whipped
Directions:
Place the feta cheese and 1/2 cup whipping cream in a flood processor and whip until smooth.
Remove from food processor and place in a bowl.
Fold in the whipped cream.
It is best to refrigerate for a while before filling the watermelon.
Garnish with mint and serve chilled.

How many does this recipe make please?
Hi Sara, i haven’t made it in a while. It probably makes a dozen, you can stretch it for more or use leftovers as a spread for sandwiche. When I make it again I will update with approximate servings.
