
Breakfast on the go – banana-oatmeal-mango smoothie
Do you sometimes take your breakfast to go? I am not advocating it but if you do, then an oatmeal smoothie may be the way to go.
I am a big fan of oatmeal for breakfast and this smoothie incorporates the elements of a morning oatmeal into a drink. Smoothies are not an exact science so don’t get hung up on quantities. Add your ingredients to the blender and enough liquid of your choice to make the thick or thin consistency that you like. If you like it sweet add honey, agave or maple syrup.
One of the secrets to good smoothies is a frozen banana. Frozen banana makes the smoothies creamy and adds viscosity. When the bananas on the counter look like they are going to get overripe, just place them in your freezer. I do it peel on or peel off. If you peel them first of course they need to wrapped with plastic or stored in a container.
For this smoothie I use rice milk and orange juice, banana, oatmeal and whatever fruits, fresh or frozen, I happen to have in the fridge. Today I had frozen mango.
Another thing that makes a difference in smoothies is the blender you use. Not all blenders are equal. I have the Vitamix that whirls things into a perfectly smooth texture but you may have another brand you like. If you don’t have a good blender I would say invest in one, it’s one of those indispensible tools in the kitchen.
Makes 2 servings
Ingredients:
1 banana
1 1/2 cups rice milk or another plant based milk
1/2 cup orange juice
1 cup oatmeal
1 cup mangos, frozen
1 tablespoon agave syrup
Directions:
Place all of the ingredients in a blender and blend until smooth, adding more liquid if necessary.
If you have used only fresh fruits you can add a few ice cubes to the blender.
Pour into 1-2 glasses or jars, sprinkle a little cinnamon on top and go.
