Shredded Cabbage with Lemon Vinaigrette
Simple yet delicious crisp salad made of shredded cabbage, chopped parsley and vinaigrette. As far as I am concerned simple is often the best, in almost everything. Instead of the usual coleslaw with mayo, why not try something light and refreshing? Toasted pumpkin seeds or chopped peanuts also enhance this salad. Of course you can elaborate, add red cabbage, shredded carrots, thinly slice onion, even apple. Go ahead, make my day. No, just kidding, I won’t come after you like Clint Eastwood. What you do in the kitchen is your business. This is a refreshing and simple salad to go along with dinner this summer.
Ingredients:
1/2 small cabbage, shredded thin but not too fine
A good handful of chopped flat leaf parsley
A handful of chopped roasted peanuts or toasted pumpkin seeds, optional (not pictured).
Vinaigrette:
1 tablespoons vinegar
2 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon sugar
6 tablespoons olive oil
Mix vinegar, lemon juice, salt and sugar in a small bowl.
Whisk in olive oil.
Taste and adjust seasoning adding more lemon juice if needed.
Method:
Combine cabbage and parsley in a bowl.
Drizzle dressing over and serve with extra salt and a wedge of lemon.
Sprinkle seeds or crushed peanuts if using.
Serve chilled.
