Here is a simple to make salad that creates its own dressing and is delicious on its own or alongside other foods. It’s a typical salad in Israel and each family has its special way of cutting the vegetables and adding this or that to personalize the outcome. Many take pride in cutting the vegetables into very small cubes that blend together into a lovely fine salad that you could almost eat with a spoon. Serve it with good bread to soak up the juices.

Ingredients:

2 ripe red tomatoes or a few handfuls of red and yellow cherry tomatoes, quartered

2-3 cucumbers

1 small onion

1/2 cup parsley, chopped

Juice from half a lemon

Generous amount of salt

2 tablespoons olive oil

Directions:

Cut the tomatoes into small dice. If using cherry tomatoes cut them into quarters.

Cut the cucumbers into small dice, about the same size as the tomatoes.

Chop the onion finely

To assemble: combine tomatoes, cucumber, onion and parsley in a bowl. Add lemon juice, oil and salt. Taste and adjust the seasoning. Transfer into a serving bowl and serve immediately.
