
Baked Apples with Granola and Vanilla Cream
For apple lovers only. A heart-warming country style dessert to end a fall or winter dinner. Serve it floating on vanilla pastry cream or with a scoop of ice cream and caramel sauce.
1 apple per person (gala, empress, honeycrisp or other firm apples)
Brown sugar
Crushed granola
Butter
Vanilla cream (see recipe)
Or:
Caramel sauce:
1 cup sugar
2 tablespoons water
2 tablespoon butter
1 cup cream
Cut the top off the apple and reserve to use as a “lid”. Scoop out center of apples with a spoon, not cutting all the way through, to create a cavity into which you will add the filling. Rub cut surface with lemon juice to prevent discolouration.
Put a spoonful of brown sugar into each apple cavity, top with crushed granola, piling it a bit higher than the top of the apple. Top with butter and replace the apple top to serve as a “lid”.
Place apples in a baking dish and pour some water into the bottom of the dish to prevent the apples from burning. I usually add a bit of brown sugar to the water as well.
Bake in 375℉ oven about 30 minutes until apple is cooked through. After about 15 minutes open the oven door and if the pan is dry add a bit more water so the apples do not cook in a dry pan.
Serve warm with ice cream or vanilla cream.
